What to expect with food safety audits

If you’re head down running a busy kitchen, the thought of an impending food safety audit may bring on additional stress.  

This article will help you feel more confident about an upcoming audit and provide knowledge on how to make it go more smoothly.    

A food safety verifier is responsible for assessing your kitchen’s systems and evaluating whether it complies with government legislation and regulations. He or she will also make sure that your  Food Control Plan records match your procedures. 

Food safety audits are designed to keep staff and customers safe but they can be costly if you’re not well prepared.

Check out these 4 handy reminders and feel better prepared when your next audit rolls around.

1. Be prepared

The weeks leading into your audit are not the ideal time to start checking that records are completed accurately. You should be regularly reviewing your records over the year and be confident that you are audit ready all the time.

2. Record check

Ensure your records are easily accessible for your verifier to save them time and frustration. Create a clear way of flagging the information needed.  With Chomp, you can see this information easily via your audit report. The more time it takes your verifier to find the info they require the more expensive the audit will be. If you are paper based, start preparing as soon as your verifier has confirmed their appointment.

3. Have a team talk

Make sure your team knows the date and time of the audit. Your team must be ready to answer your verifier’s queries, and provide additional information as needed.

4. Be confident in your processes

The verifier will review compliance through your records, but they will also want to see these processes in action. For example: Does your team know your cleaning methods? Can they confidently complete accurate temperature checks? And are you providing food safety training? 

Finally, make sure staff are on top of your food safety plan and your kitchen's requirements in their food prep and service roles.
